Homemade candies are delicious, fun to make, and they make great gifts. Here are some old, some new, candy recipes to add to your recipe files. Choose from Amish Christmas Candy which is a chocolate candy rolled up on waxed paper, chilled, and sliced or from Ms Downing's Divinity. Since both candies are so different, you will probably want to make them both! Yummy!

AMISH CHRISTMAS CANDY

1 stick butter
12-oz chocolate chips
1 cup chopped nuts
5-oz colored miniature marshmallows
1 cup coconut, optional

Melt butter and chocolate chips until creamy. Fold the marshmallows into the chocolate mixture. Spread the nuts and the coconut,if using, on a sheet of waxed paper. Cover with the chocolate-marshmallow mixture. Roll up like a jelly roll. Refrigerate until solid. Slice and serve.

MS DOWNING'S DIVINITY

2 1/2 cups sugar
1/4 cup hot water
3/4 cup white corn syrup
2 egg whites, beaten to stiff peaks
pinch of salt
1 tsp vanilla
2/3 cup chopped walnuts or pecans

Boil sugar, syrup, and water to a definite thread stage. (When the spoon is lifted the syrup is stringy like threads.) Mix salt into the egg whites. Pour 2/3 of the syrup slowly into the egg whites; beat constantly and add vanilla while still beating. Reheat 1/3 of the sugar syrup to a boiling point; add slowly to egg white mixture, beating constantly. When candy forms stiff peaks, stir in the nuts and drop by tablespoonfuls onto greased cookie sheets. Cool. Store in airtight containers.

Making candies at home is not something which is new. People have been making candies of different tastes and shapes since years. You will see that making rock candy at homes has been the most favorite thing which kids and even adults can do. Making a rock candy means that you have grown crystals on your own, which you can eat and enjoy what you have made. This activity is interesting and creative because you get to make colorful candies. These candies are actually sugar crystals. If you look peep into the history of candy making, then you will come to know that it was the rock candy, which was first made. These candies are actually the clusters of sugar granules. You can make a rock candy at home by following a simple and easy recipe.

Things/Ingredients You Need

Sugar 2-4cups Water 1 cup Food color Cotton string Glass jar Butter knife Saucepan Stove Candy thermometer Oil(to brush/grease)

Method

Take a saucepan and add 1 cup of water in it. Now add 2 cups of sugar first. Melt the sugar in water. Add your favorite food color, in order to prepare a colored rock candy. When the sugar gets dissolved, then you need to add more sugar. Keep on stirring the mixture of homemade rock candy, in order to make sure that the sugar has properly melted. Make sure that the syrup does not get too hot. Cook it on low heat. Heat the mixture till you it gets transparent and you do not see any sugar crystal floating. Now, you can remove the pan from flame and add few drops of flavor of your own choice. Put the pan in the fridge for around 10-15 minutes. Make sure that the mixture only gets cooled down before you actually pour it in the glass jar. Damp the string in the syrup and roll it in granulated sugar crystals. Shake the string, in order to get rid of the excess amount of sugar. Tie this string to the knife, in order to make it rest properly on top of the jar. Make sure that the knife does not touch the sides or base of the jar. Pour the mixture, which you have cooled down and now add the sugar coated cotton string. Cover the jar with the help of paper towel and keep it for 6-7 days. Now remove the homemade rock candy from the jar and eat it.

Above-mentioned was the simplest and tempting recipe of rock candy. It shows that making rock candies at home is something, which your kids can also do, but in your supervision.

Dairy Free Banana & Chocolate Chip Ice Cream Recipe

Who would have thought that your child's food allergies could actually save you money?  We are finding that our son's dairy allergy has been a blessing in disguise.  I now make all our own snacks including travel snacks, camping snacks, and movie snacks.  They not only taste great and are easy to make, but are healthy and saves us a ton on the impulse buys at the grocery store.

I have a growing number of great travel snack recipes that are available on my blog for parents to access which include homemade granola, homemade dairy free breakfast bars, cookies, cakes, dairy free parfait, homemade fruit rolls, homemade pop corn, pies, cakes, sweet breads, dairy free and artificial free candy, muffins, cup cakes and more.  Today's article I am happy to provide you our family favorite:

Dairy Free Banana & Chocolate Chip Ice Cream

Items you will need: heavy based sauce pan, whisk, measuring cups, measuring spoons

Ingredients:

3/4 Cup Sugar

1/8 tsp Salt

1 3/4 Cups Rice Milk, Almond Milk or other dairy free milk

2 large eggs, beaten

1 1/2 Cups Milk, either rice milk, almond milk (recipe works best if you can use Goat Milk if it can be tolerated)

2 teaspoons Banana extract (or vanilla)

In heavy sauce pan, combine sugar, salt, and milk.  Cook over medium heat stirring occasionally until mixture is steaming.  Reduce heat to low.

In medium bowl, slightly beat eggs.  Slowly whisk half of the hot mixture into the eggs and pour back into the sauce pan.  Cook over medium-low heat until slightly thick, about 3 minutes. Remove from heat and refrigerate until chilled or overnight.

When ready to freeze, stir in the 1 1/2 Cups Milk (preferably Goat Milk, but any other type of milk will work), and banana (or vanilla) extract into the chilled custard mixture.

Start ice cream maker and pour mixture through hole in lid.  Freeze until desired consistency then add two or 3 overripe mashed bananas, 1/2 cup dairy free chocolate chips, and even a broken up dairy free sugar cone to the ice cream maker.  Let it mix for an additional 15 minutes.

Ice Cream will be soft, so put into the freezer for 4 hours before serving.  Get started on your next batch because this one won't last long it's so yummy!

Chocolate lovers - this is some of the best home made chocolate ice cream you'll ever taste. You'll be proud that you made it all by yourself.

3/4 cup sugar

1 cup milk

1/4 teaspoon salt

2 tablespoons unsweetened cocoa powder

3 egg yolks, beaten lightly

2 oz. semisweet chocolate, chopped

2 cups heavy cream

1 teaspoon vanilla extract

Directions

In a saucepan, combine the sugar, milk, salt and cocoa powder. Cook over medium heat, stirring constantly. Bring mixture to a simmer.

Place the egg yolks into a small bowl. Gradually stir in 1/2 cup of the hot chocolate mixture. Pour egg and chocolate mixture into the saucepan. Heat until thick but don't bring to a boil.

Remove pan from heat and stir in the chopped chocolate. Keep stirring until all of the chocolate is melted. Pour chocolate mixture into a chilled bowl and refrigerate for two hours, until ice cream is very cold, stir occasionally.

After the chocolate mixture has cooled completely, stir in the cream and vanilla extract. Pour into an ice cream canister or maker and follow manufacturers instructions.

24 oz. frozen sweetened strawberries, cut up into large chunks

1/2 cup sugar

1 tablespoon sugar

1 1/2 cups heavy cream

Directions

Place the frozen strawberries into a blender. In a bowl, whisk the sugar into the cream. With blender on mediuim speed, slowly add the cream through the open lid. Blend until mixture is nice and smooth and berries are broken up into small pieces.

Pour strawberry mixture into a shallow pan and freeze for 2 hours, until ice cream is firm.

In a saucepan, combine the half and half cream, dry milk, and regular milk and cook over low heat. Heat thoroughly, stirring constantly, until dry milk is dissolved. Remove pan from heat.

Stir in the vanilla. Let mixture cool. Refrigerate until chilled.

Pour mixture into a blender and blend until smooth. Pour into an ice cream maker and follow manufactuere's instructions.

1 quart half and half cream

1 can condensed milk

1 tablespoon vanilla

4 bananas, mashed

Directions

In a bowl, combine the half and half cream, condensed milk and vanilla. Stir until mixure is smooth. Add in the bananas and the milk; mix completely. Pour into an ice cream maker and follow manufactuere's instructions.
